Funky and complex apple oddity.
Primary fermentation with Belgian Saison yeast strains then aged for a year with wild yeast from apple skins, including three months on apple lees. Apples were hand-picked near the UG Brewery and cold pressed on-site.
Oh, all you my flowers, oh, all you childish fruits, whose juice bubbles under the translucent skin, how beautifully you reached out towards my picking hand, as if it were a sweet, little god that cannot be resisted.
